This is a really lovely jam. It's not at all like most preserves which can be cloyingly sweet. The caramelization of the figs provides just the right amount of added flavor. They have a beautiful website filled with lots of goodies and I just found out that they have a cooking program in Australia! You can download an episode if you'd like to check it out.
